Red Cabbage Asian Salad (Paleo)

A rich mouth-watering and nutritious free radical fighting salad that incorporates all the nutritional benefits of red cabbage, apples, almonds and apple cider vinegar. Light, fresh and crisp this is an easy and  delicious way to celebrate late summer.

Red cabbage is a member of the nutrient-dense cruciferous family and a great source of  vitamin K, vitamin C, fiber and vitamins B1, B2 & B6, and omega 3.  It helps cleanse our cells, fights free radicals and promotes gastrointestinal health. The dressing is made from apple cider vinegar, a powerful tonic in itself. Apple Cider Vinegar contains a host of vitamins, such as beta-carotene, pectin and vital minerals such as potassium, sodium, magnesium, calcium, phosphorous, chlorine, sulphur, iron, and fluorine. Pectin in the vinegar is a fiber which helps reduce bad cholesterol and helps in regulating blood pressure and will help extract calcium from the fruits, vegetables or meats it's mixed with.

Benefits of Apple Cider Vinegar:

  1. The potassium in this vinegar helps in eliminating toxic waste from the body

  2. The beta-carotene helps in countering damage caused by free radicals, helping one maintain firmer skin and a youthful appearance

  3. Contains malic acid which is very helpful in fighting fungal and bacterial infections, as well as dissolving uric acid deposits that form around joints, helping relieve joint pains

  4. Helps with weight loss as it has properties that help to break down fat

  5. Helps in ailments such as constipation, headaches, arthritis, weak bones, indigestion, high cholesterol, diarrhea, eczema, sore eyes, chronic fatigue, mild food poisoning, hair loss, high blood pressure, obesity, along with a host of many other ailments

 Ingredients:

  • 1/2 head of organic green cabbage, shredded

  • 1/2 head of organic red cabbage, shredded

  • 3 organic green onions, chopped

  • 3/4 cup slivered raw organic almonds

  • 1 large organic carrot, shredded * optional *

  • 3 tablespoons roasted organic sesame seeds

  • 1/4 cup organic olive oil

  • 1/4 cup organic apple cider vinegar

  • 1 teaspoon organic raw honey

  • sea salt & fresh ground black pepper to taste

Directions:

  • In a large bowl, add the cabbages, green onions, and almonds.

  • When adding the sesame seeds, slightly crush them between your fingertips (this releases more flavor).

  • Mix everything together.

Dressing:

  • In a small bowl, whisk together the remaining ingredients.

  • Pour over the salad and mix until the cabbage is well coated. Taste, and adjust seasonings as needed. The salad can be enjoyed immediately, but you can let it marinate in the fridge for a few hours before serving.
